How to Make Asiago Spinach Breadsticks With Pine Nuts
- Preheat oven to 350°F (175°C). Grease two baking sheets.
- Rinse 1 cup of baby spinach leaves and microwave on high for 3 minutes. Drain thoroughly in a colander and let cool completely. Chop coarsely.
- Crack one large egg; separate the yolk and the white. Set the egg white aside for glazing.
- In your bread machine pan, combine wet ingredients first according to your bread machine's instructions. Typically this would be 1 cup of warm water, 2 tablespoons of olive oil and 1 tablespoon of sugar.
- Add 3 cups of all-purpose flour and 1/4 cup of pine nuts to the bread machine pan, mixing according to bread machine instructions. Many recommend adding the dry ingredients after wet ingredients.
- Add 2 1/4 teaspoons of active dry yeast to the flour creating a well in the center. Add 1 tablespoon of salt and place away from yeast.
- Sprinkle 1 cup of grated Asiago cheese evenly over the top of the ingredients in the bread machine pan.
- Select the dough setting on your bread machine and press start. The dough will take approximately 1 1/2 hours to complete.
- Once the dough cycle is complete, remove the dough from the bread machine and gently punch it down.
- Divide the dough into 16 equal pieces.
- Roll each piece into a 6-inch rope using your palms.
- Arrange the breadsticks onto prepared baking sheets, leaving about 2 inches between each.
- In a small bowl, whisk together the reserved egg white and 2 teaspoons of water to create an egg wash.
- Brush the breadsticks evenly with the egg wash.
- Sprinkle generously with coarse salt.
- Bake for 20-25 minutes, or until the breadsticks are golden brown and cooked through.
Chef's Tip for Extra Flavor
Chef's secret: layers of flavor make a dish truly memorable! Consider what a little extra something could bring – perhaps a touch of acidity like a good vinegar or citrus zest, a hint of smokiness from paprika, a bit of umami from mushrooms or soy sauce, or a sprinkle of toasted nuts for texture. Experiment and taste as you go!
