Ingredients for Asiago Spinach Breadsticks With Pine Nuts

  • 1 cup warm water
  • 1 large egg
  • 1 cup grated Asiago cheese
  • 1 cup baby spinach leaves
  • Olive Oil
  • Honey
  • Salt
  • All Purpose Flour
  • 1/4 cup pine nuts
  • 2 1/4 teaspoons active dry yeast
  • 1 tablespoon coarse salt

How to Make Asiago Spinach Breadsticks With Pine Nuts

  1. Preheat oven to 350°F (175°C). Grease two baking sheets.
  2. Rinse 1 cup of baby spinach leaves and microwave on high for 3 minutes. Drain thoroughly in a colander and let cool completely. Chop coarsely.
  3. Crack one large egg; separate the yolk and the white. Set the egg white aside for glazing.
  4. In your bread machine pan, combine wet ingredients first according to your bread machine's instructions. Typically this would be 1 cup of warm water, 2 tablespoons of olive oil and 1 tablespoon of sugar.
  5. Add 3 cups of all-purpose flour and 1/4 cup of pine nuts to the bread machine pan, mixing according to bread machine instructions. Many recommend adding the dry ingredients after wet ingredients.
  6. Add 2 1/4 teaspoons of active dry yeast to the flour creating a well in the center. Add 1 tablespoon of salt and place away from yeast.
  7. Sprinkle 1 cup of grated Asiago cheese evenly over the top of the ingredients in the bread machine pan.
  8. Select the dough setting on your bread machine and press start. The dough will take approximately 1 1/2 hours to complete.
  9. Once the dough cycle is complete, remove the dough from the bread machine and gently punch it down.
  10. Divide the dough into 16 equal pieces.
  11. Roll each piece into a 6-inch rope using your palms.
  12. Arrange the breadsticks onto prepared baking sheets, leaving about 2 inches between each.
  13. In a small bowl, whisk together the reserved egg white and 2 teaspoons of water to create an egg wash.
  14. Brush the breadsticks evenly with the egg wash.
  15. Sprinkle generously with coarse salt.
  16. Bake for 20-25 minutes, or until the breadsticks are golden brown and cooked through.

Chef's Tip for Extra Flavor

Chef's secret: layers of flavor make a dish truly memorable! Consider what a little extra something could bring – perhaps a touch of acidity like a good vinegar or citrus zest, a hint of smokiness from paprika, a bit of umami from mushrooms or soy sauce, or a sprinkle of toasted nuts for texture. Experiment and taste as you go!
