How to Make Frozen Watermelon

  1. Line an 8-cup mold or mixing bowl completely with aluminum foil, leaving some overhang for easy removal.
  2. In a medium bowl, soften 2 cups of vanilla ice cream slightly (about 5 minutes at room temperature).
  3. Working quickly, spread the softened vanilla ice cream 1 inch thick over the bottom and sides of the prepared bowl.
  4. Immediately place the bowl in the freezer and freeze for about 1 hour, or until the ice cream is slightly firm.
  5. Once slightly firm, spread the remaining 1 cup of softened vanilla ice cream up the sides to the top of the bowl.
  6. Return to the freezer for about 1 hour, or until firm.
  7. In a separate medium bowl, combine 1 cup raspberry sherbet and 1/2 cup chocolate chips.
  8. Gently mix until the chocolate chips are evenly distributed throughout the sherbet.
  9. Pour the raspberry sherbet mixture into the vanilla ice cream-lined bowl.
  10. Cover the bowl tightly with plastic wrap and freeze overnight, or until completely solid.
  11. In a small bowl, gently mix 1/4 cup whipped topping with a few drops of green food coloring until you reach your desired shade.
  12. When ready to serve, remove the mold from the freezer and carefully peel away the plastic wrap.
  13. Invert the mold onto a serving platter larger than the mold.
  14. Remove the mold and peel off the foil.
  15. Spread the green-tinted whipped topping evenly over the frozen dessert.
  16. Serve immediately, or freeze until the topping is firm. Cut into wedges and enjoy!
