How to Make Hamburger Buddy
- Finely chop 1 large garlic clove using a food processor fitted with the steel blade attachment.
- Add 1 cup of shredded carrots and 1 cup sliced mushrooms to the food processor. Process until finely chopped.
- Add 1 medium onion and pulse until roughly chopped. Set aside.
- In a large oven-safe skillet or Dutch oven, brown 1 lb ground beef over medium-high heat, breaking it up with a wooden spoon, until no longer pink (3-5 minutes).
- Stir in the chopped vegetables, 1 teaspoon dried thyme, 1 teaspoon salt, and ½ teaspoon black pepper. Cook, stirring often, until vegetables soften and mushrooms release their juices (5-7 minutes).
- Add 1 ½ cups beef broth, 1 cup elbow macaroni, 1 tablespoon Worcestershire sauce, and ½ cup water to the skillet.
- Bring to a boil.
- Reduce heat to medium-low, cover, and simmer, stirring occasionally, until the pasta is tender (8-10 minutes).
- In a small bowl, whisk together ¼ cup beef broth and 2 tablespoons all-purpose flour until smooth.
- Stir the flour mixture into the hamburger mixture.
- Stir in ½ cup sour cream.
- Simmer, stirring often, until the sauce has thickened (about 2 minutes).
- Serve immediately, sprinkled with fresh parsley (optional).
