How to Make Hearty Barley And Chicken Casserole
- Bring 4 cups of chicken broth to a boil in a medium, covered saucepan.
- Add 1 cup of barley and return to a boil.
- Reduce heat to low, cover, and simmer for 45 minutes, or until barley is tender and the liquid is absorbed.
- Meanwhile, melt 2 tablespoons of butter in a large skillet over medium heat.
- Add 1 teaspoon of curry powder, 8 ounces of sliced mushrooms, and 1/2 cup of chopped onion.
- Sauté for 3-5 minutes, or until the onion is translucent.
- Add the mushroom-onion mixture to the cooked barley. Stir in 1 cup of cooked chicken (shredded or diced), 1/2 cup of heavy cream, 1/4 cup of grated Parmesan cheese, 1/4 teaspoon of salt, and 1/4 teaspoon of black pepper.
- Preheat oven to 350°F (175°C).
- Spoon the mixture into a greased 2-quart casserole dish.
- Cover and bake for 45 minutes.
- Remove the cover and bake for 5 minutes longer, or until golden brown and bubbly.
