How to Make Herb Roasted Chicken Convection Microwave
- In a medium bowl, cream together 1/4 cup (1/2 stick) softened margarine, 2 cloves minced garlic, 1/4 cup grated parmesan cheese, 1 tablespoon dried sage, 1 tablespoon dried thyme, and 1 tablespoon dried basil.
- Turn the chicken breast side up. Gently loosen the skin at the openings on each side of the breast using your fingers.
- Carefully continue loosening the skin over the thighs and legs, smoothing it as much as possible.
- Using your fingers, evenly spread the herb mixture under the skin.
- Place the chicken, breast side up, on a microwave-safe broiling trivet or rack.
- Bake on high mix setting for 9-13 minutes per pound, or until a meat thermometer inserted into the thickest part of the thigh registers 165°F (74°C) and the juices run clear. The chicken next to the bone should no longer be pink.
