How to Make Herb Roasted Chicken Convection Microwave

  1. In a medium bowl, cream together 1/4 cup (1/2 stick) softened margarine, 2 cloves minced garlic, 1/4 cup grated parmesan cheese, 1 tablespoon dried sage, 1 tablespoon dried thyme, and 1 tablespoon dried basil.
  2. Turn the chicken breast side up. Gently loosen the skin at the openings on each side of the breast using your fingers.
  3. Carefully continue loosening the skin over the thighs and legs, smoothing it as much as possible.
  4. Using your fingers, evenly spread the herb mixture under the skin.
  5. Place the chicken, breast side up, on a microwave-safe broiling trivet or rack.
  6. Bake on high mix setting for 9-13 minutes per pound, or until a meat thermometer inserted into the thickest part of the thigh registers 165°F (74°C) and the juices run clear. The chicken next to the bone should no longer be pink.
