How to Make Honey Poached Peaches
- Combine 2 cups cold water, 1 cup granulated sugar, and ½ cup honey in a large, shallow pan or non-stick skillet.
- Cook over low heat, stirring gently, until the sugar dissolves completely.
- Bring the mixture to a boil, then reduce heat and simmer gently for 10 minutes.
- Add 4 ripe but firm peaches (halved and pitted) to the pan.
- Cover the pan and simmer for 5-10 minutes, or until the peaches are tender but still hold their shape.
- Carefully remove the peaches with a slotted spoon and place them on a plate to cool.
- Increase the heat and boil the remaining syrup for another 10 minutes, or until it reduces to about 1 cup. This will thicken the syrup.
- Remove from heat and let the syrup cool completely before chilling in the refrigerator.
- Once the peaches and syrup are cool, you can peel the peaches (optional) for a smoother texture.
