How to Make Honeydew Sorbet
- Zest and juice 1 large lime. In a medium bowl, mash 1/3 cup Splenda with the lime zest using a spoon to release the oils.
- Let the zest and Splenda mixture stand for 5-10 minutes to allow the flavors to meld.
- Stir in 1/2 cup of the fresh lime juice into the lime zest and Splenda mixture.
- Pour the mixture through a fine-mesh sieve into a blender or food processor to remove any solids.
- Discard the lime zest.
- Add 4 cups cubed honeydew melon to the blender or food processor. Blend until completely smooth, adding more melon in batches if necessary.
- Transfer the smooth honeydew puree to a bowl.
- Taste the sorbet and add more Splenda (up to 1/4 cup more, to taste) and/or lime juice (up to 1/4 cup more, to taste) as needed.
- Place the bowl in a larger bowl filled with ice water. Stir frequently for 5-10 minutes until the mixture is thoroughly chilled.
- Transfer the chilled mixture to a freezer-safe container. Freeze for at least 4 hours, or until solid.
- Once solid, remove the sorbet from the freezer and let it sit at room temperature for about 10 minutes to soften slightly.
- Using an electric mixer, beat the sorbet until it becomes light and creamy.
- Return the sorbet to the freezer for at least 30 minutes to allow it to firm up again before serving.
