How to Make Honeydew Sorbet

  1. Zest and juice 1 large lime. In a medium bowl, mash 1/3 cup Splenda with the lime zest using a spoon to release the oils.
  2. Let the zest and Splenda mixture stand for 5-10 minutes to allow the flavors to meld.
  3. Stir in 1/2 cup of the fresh lime juice into the lime zest and Splenda mixture.
  4. Pour the mixture through a fine-mesh sieve into a blender or food processor to remove any solids.
  5. Discard the lime zest.
  6. Add 4 cups cubed honeydew melon to the blender or food processor. Blend until completely smooth, adding more melon in batches if necessary.
  7. Transfer the smooth honeydew puree to a bowl.
  8. Taste the sorbet and add more Splenda (up to 1/4 cup more, to taste) and/or lime juice (up to 1/4 cup more, to taste) as needed.
  9. Place the bowl in a larger bowl filled with ice water. Stir frequently for 5-10 minutes until the mixture is thoroughly chilled.
  10. Transfer the chilled mixture to a freezer-safe container. Freeze for at least 4 hours, or until solid.
  11. Once solid, remove the sorbet from the freezer and let it sit at room temperature for about 10 minutes to soften slightly.
  12. Using an electric mixer, beat the sorbet until it becomes light and creamy.
  13. Return the sorbet to the freezer for at least 30 minutes to allow it to firm up again before serving.
