Ingredients for Hot Pickled Bologna

  • 1 pound bologna
  • Crushed Red Pepper Flakes
  • Cayenne Pepper
  • 1 teaspoon salt
  • 4-6 cloves garlic
  • 1/4 cup sugar
  • 1/2 cup water
  • White Vinegar

How to Make Hot Pickled Bologna

  1. Cut 1 pound of bologna into 1/2-inch thick slices.
  2. In a clean, sterilized 1-quart jar, add 4-6 cloves of garlic, packing them tightly around the edges.
  3. In a small saucepan, combine 1 cup apple cider vinegar, 1/2 cup water, 1/4 cup sugar, 2 tablespoons yellow mustard seeds, 1 tablespoon red pepper flakes (adjust to your spice preference), and 1 teaspoon salt. Bring to a boil over medium heat, stirring until sugar dissolves.
  4. Carefully pour the hot pickling liquid over the bologna and garlic in the jar, leaving about 1/2 inch of headspace.
  5. Secure the lid tightly on the jar.
  6. Refrigerate for at least 24 hours. For best flavor, let it pickle for 2-3 days before enjoying.

Chef's Tip for Extra Flavor

Small additions can make a big impact! Try a sprinkle of fresh herbs, a dash of your favorite spice blend, or a squeeze of citrus just before serving to really enhance the flavors of your dish.
