Ingredients for Hot Spinach Salad
- 10 ounces fresh spinach
- Bacon
- Sliced Mushrooms
- 2 tablespoons reserved bacon grease
- 2 tablespoons red wine vinegar
- Onion
- Hard Boiled Eggs
- ½ ripe avocado, sliced
How to Make Hot Spinach Salad
- Preheat oven to 375°F (190°C). Cook 4 slices of bacon until crispy. Remove bacon and crumble, reserving 2 tablespoons of bacon grease.
- While bacon cooks, wash and thoroughly dry 10 ounces of fresh spinach. Roughly chop 1 cup of cremini mushrooms.
- In a large salad bowl, combine the spinach and mushrooms.
- In a small saucepan, heat the reserved bacon grease over medium heat. Add 2 tablespoons of red wine vinegar and 1 tablespoon of finely chopped red onion. Bring to a simmer, stirring constantly for 1-2 minutes until slightly thickened.
- Pour the warm dressing over the spinach and mushroom mixture. Gently toss to coat.
- Add the crumbled bacon to the salad.
- Fry or poach 2 large eggs to your liking. Slice and add to the salad along with ½ a ripe avocado, sliced.
- Serve immediately on warm plates.
