  • 10 ounces fresh spinach
  • Bacon
  • Sliced Mushrooms
  • 2 tablespoons reserved bacon grease
  • 2 tablespoons red wine vinegar
  • Onion
  • Hard Boiled Eggs
  • ½ ripe avocado, sliced

How to Make Hot Spinach Salad

  1. Preheat oven to 375°F (190°C). Cook 4 slices of bacon until crispy. Remove bacon and crumble, reserving 2 tablespoons of bacon grease.
  2. While bacon cooks, wash and thoroughly dry 10 ounces of fresh spinach. Roughly chop 1 cup of cremini mushrooms.
  3. In a large salad bowl, combine the spinach and mushrooms.
  4. In a small saucepan, heat the reserved bacon grease over medium heat. Add 2 tablespoons of red wine vinegar and 1 tablespoon of finely chopped red onion. Bring to a simmer, stirring constantly for 1-2 minutes until slightly thickened.
  5. Pour the warm dressing over the spinach and mushroom mixture. Gently toss to coat.
  6. Add the crumbled bacon to the salad.
  7. Fry or poach 2 large eggs to your liking. Slice and add to the salad along with ½ a ripe avocado, sliced.
  8. Serve immediately on warm plates.
