Ingredients for Hutspot
- 1 large onion (about 1 cup diced)
- 2 large carrots (about 1 cup diced)
- 2 lbs potatoes
- Evaporated Milk
- 4 tablespoons butter
- 1 teaspoon salt
- 1/2 teaspoon black pepper
How to Make Hutspot
- Peel and dice 1 large onion (about 1 cup diced) and 2 large carrots (about 1 cup diced).
- In a large pot, combine the diced onions and carrots with 2 cups of water. Bring to a boil, then reduce heat and simmer for 20 minutes, or until softened.
- While the carrots and onions simmer, peel and quarter 2 lbs of potatoes. Add the potatoes to a separate pot and cover with 3 cups of water. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until tender.
- Drain both the carrots and onions and the potatoes thoroughly. Set aside to dry slightly.
- Add the cooked carrots and onions to the potatoes. Using a potato masher or electric mixer, mash until smooth and creamy.
- Stir in 4 tablespoons of butter, 1/2 cup of milk (or more, to reach desired consistency), 1 teaspoon of salt, and 1/2 teaspoon of black pepper.
- Mix until well combined and heated through.
- Serve hot as a delicious side dish or light meal. Garnish with fresh parsley (optional).
