  • 1 large onion (about 1 cup diced)
  • 2 large carrots (about 1 cup diced)
  • 2 lbs potatoes
  • Evaporated Milk
  • 4 tablespoons butter
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

How to Make Hutspot

  1. Peel and dice 1 large onion (about 1 cup diced) and 2 large carrots (about 1 cup diced).
  2. In a large pot, combine the diced onions and carrots with 2 cups of water. Bring to a boil, then reduce heat and simmer for 20 minutes, or until softened.
  3. While the carrots and onions simmer, peel and quarter 2 lbs of potatoes. Add the potatoes to a separate pot and cover with 3 cups of water. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until tender.
  4. Drain both the carrots and onions and the potatoes thoroughly. Set aside to dry slightly.
  5. Add the cooked carrots and onions to the potatoes. Using a potato masher or electric mixer, mash until smooth and creamy.
  6. Stir in 4 tablespoons of butter, 1/2 cup of milk (or more, to reach desired consistency), 1 teaspoon of salt, and 1/2 teaspoon of black pepper.
  7. Mix until well combined and heated through.
  8. Serve hot as a delicious side dish or light meal. Garnish with fresh parsley (optional).
