Ingredients for Bacon Egg Fried Rice

  • 3 large eggs
  • 4 slices bacon, cut into 1/4 inch pieces
  • Cooked Rice
  • 1/2 medium onion, chopped
  • Sliced Mushrooms
  • Frozen Peas
  • 1/2 teaspoon salt, or to taste
  • 2 tablespoons soy sauce, or to taste
  • Baby Shrimp

How to Make Bacon Egg Fried Rice

  1. Whisk eggs in a bowl and season with a pinch of salt and pepper. Scramble in a pan with 1 tablespoon of oil until fully cooked and slightly dry. Remove from heat and set aside.
  2. Rinse cooled rice with cold water and drain well to remove excess starch. Set aside.
  3. In the same pan, cook bacon over medium heat until crisp. Remove bacon with a slotted spoon and set aside, reserving about 1 tablespoon of bacon grease in the pan.
  4. Add the remaining 1 tablespoon of oil to the pan. Add the chopped onion and sauté until softened, about 3-5 minutes.
  5. Add the sliced mushrooms to the pan and cook for another 3-5 minutes, until softened.
  6. Stir in the cooked peas.
  7. Add the cooked rice and stir-fry until heated through, about 2-3 minutes.
  8. Add the scrambled eggs and cooked bacon to the pan.
  9. Stir in soy sauce and salt. Ensure everything is evenly mixed and heated through.
  10. If using shrimp, add them during the last minute of cooking.
  11. Remove from heat and serve immediately.

Chef's Tip for Extra Flavor

Want to unlock deeper, more complex flavors? Try toasting your whole spices before grinding them, or blooming ground spices in a little warm oil to enhance their aroma. Deglazing your pan with a bit of stock, wine, or even water after browning ingredients can capture those tasty caramelized bits, adding richness to your dish.
