- 3 large eggs

How to Make Bacon Egg Fried Rice
- Whisk eggs in a bowl and season with a pinch of salt and pepper. Scramble in a pan with 1 tablespoon of oil until fully cooked and slightly dry. Remove from heat and set aside.
- Rinse cooled rice with cold water and drain well to remove excess starch. Set aside.
- In the same pan, cook bacon over medium heat until crisp. Remove bacon with a slotted spoon and set aside, reserving about 1 tablespoon of bacon grease in the pan.
- Add the remaining 1 tablespoon of oil to the pan. Add the chopped onion and sauté until softened, about 3-5 minutes.
- Add the sliced mushrooms to the pan and cook for another 3-5 minutes, until softened.
- Stir in the cooked peas.
- Add the cooked rice and stir-fry until heated through, about 2-3 minutes.
- Add the scrambled eggs and cooked bacon to the pan.

- If using shrimp, add them during the last minute of cooking.
- Remove from heat and serve immediately.
