Ingredients for Irish Nachos

  • Waffle Shaped French Fries
  • 8 ounces thinly sliced corned beef
  • Green Cabbage
  • Cheddar Cheese
  • 1/2 cup beer (stout or lager recommended)
  • 1 cup chicken stock
  • Extra Virgin Olive Oil
  • Onion
  • Salt & Fresh Ground Pepper
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour

How to Make Irish Nachos

  1. Preheat oven to 450°F (232°C). Arrange waffle fries on a baking sheet and bake according to package directions, adding 10-12 minutes to the cooking time for extra crispiness.
  2. While fries are baking, heat 2 tablespoons of olive oil in a medium skillet over medium-high heat.
  3. Add the corned beef to the skillet and sauté until light golden brown and heated through (2-3 minutes).
  4. Add the sliced onions and shredded cabbage to the skillet. Cook until onions are softened and cabbage is wilted (4-5 minutes). Season with salt and pepper. Set aside.
  5. In a medium saucepan, melt 2 tablespoons of butter over medium-high heat.
  6. Whisk in the flour and cook for 1 minute.
  7. Gradually whisk in the beer and cook for 30 seconds to cook off the alcohol.
  8. Whisk in the chicken stock and bring to a simmer. Cook until thickened (2-3 minutes).
  9. Remove from heat and stir in the shredded cheddar cheese until melted. Season with salt and pepper.
  10. To serve, arrange the crispy waffle fries on a platter. Top with the corned beef and cabbage mixture. Douse generously with the cheese sauce. Enjoy!

Chef's Tip for Extra Flavor

Small additions can make a big impact! Try a sprinkle of fresh herbs, a dash of your favorite spice blend, or a squeeze of citrus just before serving to really enhance the flavors of your dish.
