- Waffle Shaped French Fries
- 8 ounces thinly sliced corned beef
- Green Cabbage
- Cheddar Cheese
- 1/2 cup beer (stout or lager recommended)
- 1 cup chicken stock
- Extra Virgin Olive Oil
- Onion
- Salt & Fresh Ground Pepper
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
How to Make Irish Nachos
- Preheat oven to 450°F (232°C). Arrange waffle fries on a baking sheet and bake according to package directions, adding 10-12 minutes to the cooking time for extra crispiness.
- While fries are baking, heat 2 tablespoons of olive oil in a medium skillet over medium-high heat.
- Add the corned beef to the skillet and sauté until light golden brown and heated through (2-3 minutes).
- Add the sliced onions and shredded cabbage to the skillet. Cook until onions are softened and cabbage is wilted (4-5 minutes). Season with salt and pepper. Set aside.
- In a medium saucepan, melt 2 tablespoons of butter over medium-high heat.
- Whisk in the flour and cook for 1 minute.
- Gradually whisk in the beer and cook for 30 seconds to cook off the alcohol.
- Whisk in the chicken stock and bring to a simmer. Cook until thickened (2-3 minutes).
