Ingredients for Reasonable Lemon Chicken And Potatoes

  • Boneless Skinless Chicken Breasts
  • Lemon Pepper Seasoning
  • 2 lbs Yukon Gold potatoes
  • 1/2 cup (1 stick) unsalted butter
  • 1/4 cup fresh lemon juice
  • 1 1/2 teaspoons salt

How to Make Reasonable Lemon Chicken And Potatoes

  1. Preheat oven to 350°F (175°C).
  2. Cut 2 lbs boneless, skinless chicken breasts in half horizontally to create 4 thinner cutlets.
  3. Place chicken cutlets in a large baking dish.
  4. In a small bowl, combine 4 tablespoons lemon-pepper seasoning and 1 teaspoon salt. Evenly coat both sides of the chicken with the seasoning mixture.
  5. Peel and chop 2 lbs of Yukon Gold potatoes into 1-inch pieces. Place the potatoes over the chicken in the baking dish.
  6. In a medium bowl, whisk together 1/2 cup (1 stick) melted unsalted butter and 1/4 cup fresh lemon juice.
  7. Pour the butter and lemon juice mixture evenly over the potatoes.
  8. Sprinkle the remaining lemon-pepper seasoning and 1/2 teaspoon salt over the potatoes.
  9. Cover the baking dish tightly with aluminum foil.
  10. Bake for 25 minutes at 350°F (175°C).
  11. Increase oven temperature to 400°F (200°C).
  12. Bake for an additional 15-20 minutes, or until the potatoes are tender and the chicken is cooked through (internal temperature of 165°F/74°C).
  13. Remove the foil and bake for 5 more minutes to lightly brown the potatoes.

Chef's Tip for Extra Flavor

Small additions can make a big impact! Try a sprinkle of fresh herbs, a dash of your favorite spice blend, or a squeeze of citrus just before serving to really enhance the flavors of your dish.
