Ingredients for Slow Cooker Pozole Pork

  • Country Style Boneless Pork Ribs
  • 1 large onion, chopped
  • Poblano Chile
  • Plum Tomatoes
  • White Hominy
  • Yellow Hominy
  • 1 tsp chili powder
  • Salt and pepper to taste
  • Thyme
  • Ground Cumin

How to Make Slow Cooker Pozole Pork

  1. Season 3 lbs pork shoulder with 1 tsp chili powder, 1 tsp cumin, 1/2 tsp oregano, 1/4 tsp cayenne pepper (optional), salt, and pepper. Brown the pork in a large skillet over medium-high heat until browned on all sides. Remove pork and set aside.
  2. Add 1 large onion, chopped, to the skillet and sauté until softened, about 5 minutes.
  3. In your slow cooker, combine the browned pork, sautéed onion, 1 (28 ounce) can whole tomatoes, undrained, 1 (15 ounce) can hominy, drained, 8 cups chicken broth, 2 cloves garlic, minced, 1 bay leaf, and 1 tsp dried oregano.
  4. Cook on low for 6-8 hours, or on high for 3-4 hours, or until the pork is very tender and easily shreds.
  5. Shred the pork with two forks and stir it back into the pozole.
  6. Serve in large bowls, garnished with fresh cilantro, avocado slices, lime wedges, and your favorite hot sauce or salsa. Serve with warm cornbread for a complete meal.

Chef's Tip for Extra Flavor

Small additions can make a big impact! Try a sprinkle of fresh herbs, a dash of your favorite spice blend, or a squeeze of citrus just before serving to really enhance the flavors of your dish.
