How to Make Slow Cooker Pozole Pork
- Season 3 lbs pork shoulder with 1 tsp chili powder, 1 tsp cumin, 1/2 tsp oregano, 1/4 tsp cayenne pepper (optional), salt, and pepper. Brown the pork in a large skillet over medium-high heat until browned on all sides. Remove pork and set aside.
- Add 1 large onion, chopped, to the skillet and sauté until softened, about 5 minutes.
- In your slow cooker, combine the browned pork, sautéed onion, 1 (28 ounce) can whole tomatoes, undrained, 1 (15 ounce) can hominy, drained, 8 cups chicken broth, 2 cloves garlic, minced, 1 bay leaf, and 1 tsp dried oregano.
- Cook on low for 6-8 hours, or on high for 3-4 hours, or until the pork is very tender and easily shreds.
- Shred the pork with two forks and stir it back into the pozole.
- Serve in large bowls, garnished with fresh cilantro, avocado slices, lime wedges, and your favorite hot sauce or salsa. Serve with warm cornbread for a complete meal.
