How to Make South African Nestle S Fudge

  1. In a large, heavy-bottomed saucepan, combine 1 cup granulated sugar and ½ cup water.
  2. Stir over low heat until the sugar dissolves completely.
  3. Add 1 cup (2 sticks) unsalted butter and ½ cup golden syrup. Stir continuously until the butter is melted and incorporated.
  4. Stir in 1 (14-ounce) can sweetened condensed milk. Bring the mixture to a rolling boil over medium heat.
  5. Reduce heat to low and boil very gently, stirring constantly, until the mixture reaches soft-ball stage (235°F/113°C on a candy thermometer).
