Ingredients for Almond Florentines

  • Graham Cracker
  • 1/2 cup (1 stick) unsalted butter
  • 1 cup packed light brown sugar
  • Sliced Almonds

How to Make Almond Florentines

  1. Preheat oven to 375°F (190°C). Lightly grease a baking sheet.
  2. Arrange graham crackers in a single layer to cover the baking sheet.
  3. In a medium saucepan, melt 1/2 cup (1 stick) of unsalted butter over medium heat.
  4. Add 1 cup packed light brown sugar and cook for 5 minutes, stirring constantly, until the mixture is smooth and melted. Do not boil.
  5. Evenly spoon the butter-sugar mixture over the graham crackers.
  6. Sprinkle generously with 1 cup slivered almonds.
  7. Bake for 7 minutes, or until the edges are golden brown.
  8. Turn off the oven and leave the florentines in the oven with the door slightly ajar to cool for 1 hour.
  9. Carefully remove from the baking sheet while still slightly warm and cut into squares. They will harden as they cool.

Chef's Tip for Extra Flavor

Chef's secret: layers of flavor make a dish truly memorable! Consider what a little extra something could bring – perhaps a touch of acidity like a good vinegar or citrus zest, a hint of smokiness from paprika, a bit of umami from mushrooms or soy sauce, or a sprinkle of toasted nuts for texture. Experiment and taste as you go!
