Ingredients for Apple Tatin

  • Cooking Apples
  • Zest of 1 orange
  • 1 teaspoon ground allspice
  • ¾ cup granulated sugar
  • ½ cup raisins
  • 6 tablespoons (3 ounces) unsalted butter, cold and cut into small pieces

How to Make Apple Tatin

  1. Preheat oven to 250°F (120°C).
  2. Peel, core, and thinly slice 6-8 medium apples.
  3. In a large bowl, toss the apple slices with the orange zest and allspice.
  4. In a 9-inch round oven-safe cake pan (cast iron is ideal), arrange the apple slices in thin, even layers, placing the rounded side of the slices against the edge of the pan. Fill in the center and any gaps.
  5. Sprinkle ¼ cup of the sugar over the apples. Dot with half of the butter pieces.
  6. Repeat layers with remaining apples, sprinkling with remaining sugar and raisins. Dot with remaining butter.
  7. The apples should come about 1 inch above the rim of the pan, but they will shrink as they cook.
  8. Cover the pan tightly with aluminum foil.
  9. Place the pan on a baking sheet to catch any drips. Bake for 5 hours.
  10. Turn off the oven and let the tatin cool completely in the oven with the door slightly ajar (about 1-2 hours).
  11. Carefully invert the Apple Tatin onto a serving plate with a slight rim to catch any juices.
  12. Serve warm with cinnamon or licorice ice cream.
