How to Make Amaretto Souffle
- Preheat oven to 375°F (190°C). Butter and sugar a 6-cup souffle dish.
- In a medium saucepan, combine the milk, sugar, and amaretto. Heat over medium heat until the sugar dissolves. Do not boil.
- In a separate bowl, whisk together the egg yolks until light and pale. Gradually whisk in the warm milk mixture.
- In a clean bowl, beat the egg whites with a pinch of salt until stiff peaks form.
- Gently fold one-third of the egg whites into the yolk mixture to lighten it. Then, gently fold in the remaining egg whites in two additions, being careful not to deflate the mixture.
- Pour the batter into the prepared souffle dish. Place the dish in a larger baking pan and pour hot water into the pan until it comes halfway up the sides of the souffle dish (this creates a bain-marie).
