How to Make Amaretto Souffle

  1. Preheat oven to 375°F (190°C). Butter and sugar a 6-cup souffle dish.
  2. In a medium saucepan, combine the milk, sugar, and amaretto. Heat over medium heat until the sugar dissolves. Do not boil.
  3. In a separate bowl, whisk together the egg yolks until light and pale. Gradually whisk in the warm milk mixture.
  4. In a clean bowl, beat the egg whites with a pinch of salt until stiff peaks form.
  5. Gently fold one-third of the egg whites into the yolk mixture to lighten it. Then, gently fold in the remaining egg whites in two additions, being careful not to deflate the mixture.
  6. Pour the batter into the prepared souffle dish. Place the dish in a larger baking pan and pour hot water into the pan until it comes halfway up the sides of the souffle dish (this creates a bain-marie).
