How to Make Artichoke Balls

  1. Preheat oven to 350°F (175°C).
  2. Drain 1 (14 ounce) can of artichoke hearts and dice them. In a large bowl, combine the diced artichoke hearts with 1 cup seasoned bread crumbs, 2 large eggs, and 2/3 cup (1.5 ounces) of shredded mixed cheeses (such as mozzarella, parmesan, and provolone).
  3. In a small skillet, sauté 1/2 cup chopped onion and 2 cloves minced garlic in 1 tablespoon of olive oil until softened and lightly browned.
  4. Add the sautéed onion and garlic to the artichoke mixture. Stir to combine.
  5. Shape the mixture into 1-inch balls.
  6. In a shallow dish, combine 1/4 cup seasoned bread crumbs and 1/4 cup (0.5 ounces) shredded mixed cheeses.
  7. Roll each artichoke ball in the bread crumb and cheese mixture to coat evenly.
