Ingredients for Australian Fish

  • Fresh Mushrooms
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • Parmesan Cheese
  • Fillets Of Sole
  • Salt and freshly ground black pepper to taste
  • Pepper
  • Green Peppers
  • White Wine
  • 1 tablespoon lemon juice
  • 1 tablespoon chopped fresh parsley

How to Make Australian Fish

  1. Preheat oven to 450°F (232°C).
  2. Melt 2 tablespoons of butter in a skillet over low heat.
  3. Add 8 ounces of sliced cremini mushrooms and sauté over medium heat until tender, about 5-7 minutes.
  4. Rub 1 tablespoon of olive oil over a shallow 4-quart baking dish and sprinkle with 1/4 cup of grated Parmesan cheese.
  5. Place 2 (6-ounce) Barramundi fillets (or other firm white fish) on top of the cheese.
  6. Season the fish with salt and freshly ground black pepper to taste.
  7. Add 1/2 cup of chopped green bell pepper to the baking dish, then top with the sautéed mushrooms.
  8. Pour 1/4 cup of dry white wine evenly over the fillets.
  9. Bake for 20 minutes, or until the fish flakes easily with a fork.
  10. Remove from oven and sprinkle with 1 tablespoon of lemon juice and 1 tablespoon of chopped fresh parsley.
  11. Serve immediately and enjoy!
