How to Make Australian Fish
- Preheat oven to 450°F (232°C).
- Melt 2 tablespoons of butter in a skillet over low heat.
- Add 8 ounces of sliced cremini mushrooms and sauté over medium heat until tender, about 5-7 minutes.
- Rub 1 tablespoon of olive oil over a shallow 4-quart baking dish and sprinkle with 1/4 cup of grated Parmesan cheese.
- Place 2 (6-ounce) Barramundi fillets (or other firm white fish) on top of the cheese.
- Season the fish with salt and freshly ground black pepper to taste.
- Add 1/2 cup of chopped green bell pepper to the baking dish, then top with the sautéed mushrooms.
- Pour 1/4 cup of dry white wine evenly over the fillets.
- Bake for 20 minutes, or until the fish flakes easily with a fork.
- Remove from oven and sprinkle with 1 tablespoon of lemon juice and 1 tablespoon of chopped fresh parsley.
- Serve immediately and enjoy!
