Ingredients for Avocado And Orange Salad
- 2 medium oranges
- 2 ripe avocados
- 1 tablespoon fresh lemon juice
- Pecan Halves
- Unsweetened Orange Juice
- Sunflower Oil
- Salt & Freshly Ground Black Pepper
How to Make Avocado And Orange Salad
- Segment the oranges: Slice off the tops and bottoms of 2 oranges. Using a sharp knife, carefully cut downwards to remove the peel and pith. Once peeled, hold the orange and cut between the membranes to release the segments. Set aside.
- Prepare the avocados: Cut 2 ripe avocados in half lengthwise. Remove the pits. Carefully scoop out the avocado flesh with a spoon and slice into 1/4-inch thick pieces.
- Prevent browning: Immediately toss the sliced avocado with 1 tablespoon of fresh lemon juice to prevent browning.
- Make the pecan dressing: In a screw-top jar, combine 1/4 cup olive oil, 2 tablespoons orange juice, 1 tablespoon honey, 1 tablespoon white wine vinegar, 1/4 teaspoon Dijon mustard, 1/4 cup chopped pecans (or walnuts), a pinch of salt, and freshly ground black pepper to taste.
- Shake well: Secure the lid and shake the jar vigorously to emulsify the dressing.
- Assemble the salad: Arrange the orange segments and avocado slices artfully on small plates or in Asian soup spoons.
- Garnish and serve: Garnish with extra chopped pecans and drizzle generously with the prepared dressing. Serve immediately and enjoy!
- Optional: For added flavour, sprinkle with a pinch of red pepper flakes
Chef's Tip for Extra Flavor
Want to unlock deeper, more complex flavors? Try toasting your whole spices before grinding them, or blooming ground spices in a little warm oil to enhance their aroma. Deglazing your pan with a bit of stock, wine, or even water after browning ingredients can capture those tasty caramelized bits, adding richness to your dish.
