Ingredients for Baked Beans Aloha
- Vegetarian Baked Beans
- 1/2 cup packed brown sugar
- 1/2 cup ketchup
- 4 slices bacon, cut into 1/4 inch strips
- 1 medium yellow onion (about 1 cup, thinly sliced)
- Fresh Pineapple
- Salt & Pepper
How to Make Baked Beans Aloha
- Preheat oven to 300°F (150°C).
- Prepare the pineapple: Cut off the top and bottom. Stand upright and use a sharp knife to remove the outer peel and eyes. Cut the pineapple in half lengthwise; reserve one half for later use. Cut the remaining half in half again. Lay each wedge on its side and slice off the woody core. Cut the pineapple into small pieces and finely chop (approximately 2 cups).
- Prepare the onions and bacon: Quarter and thinly slice one medium yellow onion (about 1 cup). Cut 4 slices of bacon into 1/4-inch strips.
- Cook the onions and bacon: In a large skillet over medium heat, cook the onions and bacon until the onions are browned and caramelized, and the bacon is crispy and tender (about 10-12 minutes). Remove from heat and set aside.
- Combine ingredients: In a large bowl, combine the chopped pineapple (2 cups), 2 (15-ounce) cans of baked beans, 1/2 cup packed brown sugar, 1/2 cup ketchup, the cooked onions and bacon. Stir to combine and season generously with salt and pepper.
- Bake: Transfer the mixture to a large (9x13 inch) baking dish. Bake uncovered for 1 hour and 30 minutes, stirring occasionally to prevent sticking.
- Serve: Let cool slightly before serving. Enjoy!
Chef's Tip for Extra Flavor
Chef's secret: layers of flavor make a dish truly memorable! Consider what a little extra something could bring – perhaps a touch of acidity like a good vinegar or citrus zest, a hint of smokiness from paprika, a bit of umami from mushrooms or soy sauce, or a sprinkle of toasted nuts for texture. Experiment and taste as you go!
