Ingredients for Bangin Mashed Potatoes
- 2 lbs russet potatoes, peeled and quartered
- 1/2 cup sour cream
- 4 ounces cream cheese, softened
- 2 tablespoons butter, divided
- 1 teaspoon salt
- Onion Powder
- 1/4 teaspoon black pepper
- Sharp Cheddar Cheese
How to Make Bangin Mashed Potatoes
- Place quartered russet potatoes in a large pot. Add enough cold water to cover by about 2 inches.
- Bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer for 20-25 minutes, or until potatoes are easily pierced with a fork.
- Drain the potatoes thoroughly in a colander.
- Preheat your oven to 350°F (175°C).
- While potatoes are still warm, return them to the pot and mash thoroughly using a hand masher or electric mixer.
- Add softened cream cheese, sour cream, 1 tablespoon of butter, garlic powder, salt, and pepper. Mix until completely smooth and fluffy.
- Transfer the mashed potatoes to a greased 1-quart baking dish.
- Dot the top with the remaining 1 tablespoon of butter.
- (Optional) Sprinkle generously with shredded cheddar cheese.
- Bake uncovered for 15-20 minutes, or until heated through and lightly golden on top.
Chef's Tip for Extra Flavor
Chef's secret: layers of flavor make a dish truly memorable! Consider what a little extra something could bring – perhaps a touch of acidity like a good vinegar or citrus zest, a hint of smokiness from paprika, a bit of umami from mushrooms or soy sauce, or a sprinkle of toasted nuts for texture. Experiment and taste as you go!
