How to Make Beer Marinated Grilled Skirt Steak
- In a wide, shallow glass baking dish, scatter 4 orange slices, 1/2 cup thinly sliced onion, and 4 cloves of minced garlic.
- Season the 1-pound skirt steak generously with salt and pepper. Place the steak in the dish on top of the orange and onion slices.
- Scatter the remaining 4 orange slices, 1/2 cup thinly sliced onion, and 4 cloves of minced garlic over the steak. Pour 1 cup of beer (Mexican lager recommended) and 2 tablespoons of soy sauce over the steak.
- Cover the dish with plastic wrap and marinate for at least 1 hour at room temperature, or up to overnight in the refrigerator for maximum flavor.
- Preheat your grill to medium-high heat (or preheat your broiler).
- Remove the steak from the marinade and discard the marinade.
- Grill the steak for 4-6 minutes per side for medium-rare, or to your desired doneness. Use a meat thermometer to ensure it reaches your preferred internal temperature (130-135°F for medium-rare).
- Let the steak rest for 5-10 minutes before slicing against the grain.
- Slice the grilled skirt steak into thin strips.
- Serve the steak in tacos, topped with your favorite fillings such as shredded cheese, beans, salsa, cilantro, and onions.
Chef's Tip for Extra Flavor
Small additions can make a big impact! Try a sprinkle of fresh herbs, a dash of your favorite spice blend, or a squeeze of citrus just before serving to really enhance the flavors of your dish.
