- Onion
- 1 bell pepper (any color), thinly sliced
- 14 oz can artichoke hearts, drained and quartered
- 6-8 small flour or corn tortillas
- Cooked Brown Rice
- Smoked Gouda Cheese
- Fat Free Sour Cream
- ½ cup your favorite salsa
How to Make Artichoke Fajitas
- Heat olive oil in a large skillet over medium heat. Add sliced onions and bell peppers. Sauté for 5-7 minutes, until softened.
- Add drained and quartered artichoke hearts and chili powder (if using). Continue to sauté for another 3-5 minutes, until heated through and slightly browned. Season with salt and pepper to taste.
- Warm tortillas. You can quickly heat them on a dry skillet over medium heat for about 30 seconds per side, or warm in a microwave-safe tortilla warmer following the manufacturer's directions. Alternatively, briefly heat them on a gas burner for a few seconds each side.
- To assemble the fajitas, layer cooked rice, the artichoke mixture, shredded cheese, sour cream, and salsa onto each warm tortilla.
- Gently roll up the fajitas and serve immediately. Enjoy!
