  1. Preheat oven to 400°F (200°C). Wash and chop 1 lb beets into 1-inch cubes.
  2. Roast beets on a baking sheet for 30-40 minutes, or until tender. Let cool slightly, then peel and roughly chop.
  3. While beets roast, prepare the sauce: In a food processor, combine 1 cup walnuts, 4 cloves garlic, 1/4 cup olive oil, 2 tablespoons lemon juice, 1 tablespoon red wine vinegar, 1 teaspoon salt, and 1/2 teaspoon black pepper.
