How to Make Chocolate Anise Cookies Biscotti
- Preheat oven to 350°F (175°C). Line a large baking sheet with parchment paper.
- In a medium bowl, whisk together 3 cups all-purpose flour, 1 teaspoon baking powder, and 1/2 teaspoon salt.
- In a large bowl, cream together 1 cup (2 sticks) softened unsalted butter and 1 cup granulated sugar using an electric mixer until light and fluffy.
- Beat in 2 large eggs one at a time, mixing well after each addition.
- Gradually add the dry ingredients (flour mixture) to the wet ingredients, mixing on low speed until just combined. Be careful not to overmix.
- Stir in 1 tablespoon ground anise seed and 1 cup semi-sweet chocolate chips.
- Turn the dough out onto a lightly floured surface and shape it into a 16-inch long, 3-inch wide log.
- Transfer the log to the prepared baking sheet.
- Bake for 30-35 minutes, or until the log is lightly golden brown.
- Remove from oven and let cool on the baking sheet for 30 minutes.
- Transfer the cooled log to a cutting board.
- Using a serrated knife, carefully slice the log diagonally into 1/2- to 3/4-inch thick slices.
- Arrange the biscotti slices cut-side down on the baking sheet.
- Bake for 12-15 minutes, or until pale golden brown.
- Transfer the biscotti to a wire rack to cool completely before serving. Enjoy!
