How to Make Corn Flake Peanut Butter Candy
- In a medium saucepan over medium-high heat, combine 1 cup granulated sugar and 1/2 cup light corn syrup. Bring to a rolling boil, stirring constantly.
- Once boiling, clip a candy thermometer to the side of the pan and continue to boil, without stirring, until the mixture reaches 240°F (115°C) – the firm-ball stage. This usually takes about 5-7 minutes.
- Carefully remove the pan from the heat. Add 1 cup creamy peanut butter and stir until smooth and well combined. Be careful, the mixture will be very hot!
- In a large bowl, combine 6 cups cornflakes. Pour the hot peanut butter mixture over the cornflakes and stir gently but thoroughly until all the flakes are evenly coated.
- Grease a baking sheet or line it with parchment paper. Spoon the mixture onto the prepared sheet, spreading it evenly to about 1/2 inch thickness.
- Let the candy cool completely at room temperature before breaking into pieces. For easier cutting, refrigerate for 30 minutes before breaking apart.
