How to Make Asian Stir Fried Mussels And Prawns
- Clean mussels thoroughly. Remove beards and scrub shells. If heavily encrusted, boil separately for a few minutes to remove grit before proceeding.
- Peel and devein prawns. Set aside.
- Heat 2 tablespoons of vegetable oil in a wok (or large frying pan) over high heat.
- Add 1 chopped red bell pepper and 1 chopped green bell pepper and stir-fry for 2 minutes until slightly softened.
- Add 2 cloves minced garlic and 1 inch grated ginger, stir-fry for 30 seconds until fragrant.
- Add 1 cup of chopped mushrooms and stir-fry for 1 minute.
- Add 1 pound of prawns and stir-fry for 2-3 minutes until pink and cooked through.
- Add 1 pound of cleaned mussels, 1/4 cup soy sauce, 2 tablespoons oyster sauce, 1 tablespoon fish sauce, 1 tablespoon rice wine vinegar, and 1 teaspoon brown sugar to the wok. Stir-fry for 3-4 minutes, or until mussels open and are cooked through. Discard any mussels that do not open.
- Sprinkle with 2 chopped green onions and serve immediately with steamed rice.
Chef's Tip for Extra Flavor
Chef's secret: layers of flavor make a dish truly memorable! Consider what a little extra something could bring – perhaps a touch of acidity like a good vinegar or citrus zest, a hint of smokiness from paprika, a bit of umami from mushrooms or soy sauce, or a sprinkle of toasted nuts for texture. Experiment and taste as you go!
