How to Make Asian Stir Fried Mussels And Prawns

  1. Clean mussels thoroughly. Remove beards and scrub shells. If heavily encrusted, boil separately for a few minutes to remove grit before proceeding.
  2. Peel and devein prawns. Set aside.
  3. Heat 2 tablespoons of vegetable oil in a wok (or large frying pan) over high heat.
  4. Add 1 chopped red bell pepper and 1 chopped green bell pepper and stir-fry for 2 minutes until slightly softened.
  5. Add 2 cloves minced garlic and 1 inch grated ginger, stir-fry for 30 seconds until fragrant.
  6. Add 1 cup of chopped mushrooms and stir-fry for 1 minute.
  7. Add 1 pound of prawns and stir-fry for 2-3 minutes until pink and cooked through.
  8. Add 1 pound of cleaned mussels, 1/4 cup soy sauce, 2 tablespoons oyster sauce, 1 tablespoon fish sauce, 1 tablespoon rice wine vinegar, and 1 teaspoon brown sugar to the wok. Stir-fry for 3-4 minutes, or until mussels open and are cooked through. Discard any mussels that do not open.
  9. Sprinkle with 2 chopped green onions and serve immediately with steamed rice.

Chef's Tip for Extra Flavor

Elevate your dish with simple flavor boosters! A final flourish of freshly chopped herbs can add incredible brightness, while a squeeze of lemon or lime juice right before serving can awaken all the flavors. Don't underestimate a sprinkle of quality finishing salt or a drizzle of good olive oil to make your creation shine.
