How to Make Crock Pot Chicken Reuben Casserole

  1. Place 2 cups of sauerkraut in the bottom of a 3 1/2-quart slow cooker.
  2. Drizzle 1/3 cup of Thousand Island dressing over the sauerkraut.
  3. Top with 3 (6-ounce) boneless, skinless chicken breasts. Spread 2 tablespoons of Dijon mustard evenly over the chicken.
  4. Layer the remaining 2 cups of sauerkraut and the remaining 3 (6-ounce) boneless, skinless chicken breasts on top.
  5. Drizzle another 1/3 cup of Thousand Island dressing over the casserole.
  6. Refrigerate the remaining dressing for serving.
