How to Make Crock Pot Southern Living Style Tortilla Soup

  1. Brown 1 lb ground chicken in a skillet over medium-high heat, breaking it up with a spoon. Drain off any excess grease.
  2. In a 6-quart slow cooker, combine the browned chicken, 1 (28 ounce) can diced tomatoes (undrained), 1 (15 ounce) can black beans (rinsed and drained), 1 (15 ounce) can corn (drained), 1 (4 ounce) can diced green chilies (undrained), 4 cups chicken broth, 1 teaspoon chili powder, 1/2 teaspoon cumin, 1/4 teaspoon cayenne pepper (optional), 1 teaspoon salt, and 1/2 teaspoon black pepper.
  3. Add 1 medium onion, chopped, and 2 cloves garlic, minced to the slow cooker.
  4. Cover and cook on low for 8 hours or on high for 4-6 hours, or until chicken is cooked through.
  5. Shred the chicken using two forks before serving.
  6. Ladle soup into bowls. Top with your favorite toppings: crushed tortilla chips, shredded cheddar cheese, avocado slices, sour cream, and/or a squeeze of lime.
  7. Serve immediately. Optional: Serve over tortilla chips for extra crunch.

Chef's Tip for Extra Flavor

Want to unlock deeper, more complex flavors? Try toasting your whole spices before grinding them, or blooming ground spices in a little warm oil to enhance their aroma. Deglazing your pan with a bit of stock, wine, or even water after browning ingredients can capture those tasty caramelized bits, adding richness to your dish.
