- 2 stalks celery, chopped

- 1 lemon, halved
- 1.5 lbs boneless, skinless chicken thighs
- Extra Virgin Olive Oil
- Red Wine
- Water
- Fresh Oregano
- 1/2 cup green olives, pitted and halved

How to Make Gypsy Chicken
- Preheat oven to 150°C (300°F). Chop celery and onion. Place in a baking dish with lemon halves and garlic cloves.
- Cut chicken thighs in half or thirds, depending on size. Arrange on top of the vegetables.
- Drizzle with olive oil and pour chicken broth (or water) over the chicken and vegetables.
- Sprinkle with dried oregano, salt, and freshly cracked black pepper.
- Cover the dish tightly with foil and bake for 1 hour.
- Add halved green olives and squeeze the juice of one lemon half into the baking dish.
- Turn the chicken pieces.
- Increase oven temperature to 250°C (480°F). Remove foil and bake for another 30 minutes, or until chicken is cooked through and onions are soft and slightly golden.
- While the chicken bakes, toast bread slices until golden brown. Cut into croutons.
- Squeeze the roasted garlic cloves out of their skins. Spread one clove onto each crouton.
- Mash the remaining garlic cloves into the pan juices.
- Serve the chicken, onions, and olives with some of the pan juices poured over. Garnish with the garlic croutons and freshly ground pepper.
