How to Make Healthy Chicken Quesadillas
- In a medium-heavy skillet, sauté the chopped onion, minced garlic, and bell pepper in 2 tablespoons of chicken broth until softened (about 5-7 minutes).
- Add the minced jalapeños and chopped tomatoes. Simmer for another 3-5 minutes, or until the liquid has mostly evaporated.
- Stir in the shredded or diced chicken and cook for 1 minute to heat through.
- Lightly spray a large skillet with nonstick cooking spray and heat over medium heat.
- Place one tortilla in the hot skillet. Sprinkle with 1/8 cup of the shredded cheese.
