How to Make Homemade Frozen Custard
- In a medium saucepan, whisk together the sugar, cornstarch, and salt.
- Gradually whisk in the milk until smooth.
- Heat over medium heat, stirring constantly, until the mixture comes to a simmer and thickens.
- Remove from heat and stir in the vanilla extract.
- In a separate bowl, whisk the egg yolks.
- Temper the egg yolks by slowly whisking in a small amount of the hot milk mixture.
- Pour the tempered egg yolks into the remaining milk mixture and whisk constantly.
- Return the mixture to the saucepan and cook over low heat for 1-2 minutes, or until the custard has thickened slightly. Do not boil.
- Remove from heat and strain the custard through a fine-mesh sieve into a bowl.
- Press plastic wrap directly onto the surface of the custard to prevent a skin from forming.
- Refrigerate until completely chilled, at least 4 hours.
- Once chilled, churn the custard in an ice cream maker according to the manufacturer's instructions.
- Once churned, transfer the frozen custard to an airtight container and freeze for at least 2 hours to allow it to harden further.
Chef's Tip for Extra Flavor
Small additions can make a big impact! Try a sprinkle of fresh herbs, a dash of your favorite spice blend, or a squeeze of citrus just before serving to really enhance the flavors of your dish.
