How to Make Avocado Basil Pasta
- Cook 1 pound pasta according to package directions until al dente. Reserve about 1/2 cup of pasta water before draining.
- While pasta cooks, prepare the avocado sauce: In a large bowl, combine 2 ripe avocados (mashed), 4 slices cooked bacon (crumbled), 1/2 cup packed fresh basil leaves (roughly chopped), 2 tablespoons lemon juice, 3 tablespoons olive oil, 1 clove garlic (minced), 1/4 teaspoon black pepper, and 1/2 teaspoon salt.
- Add the hot pasta to the avocado mixture and toss to coat. Add a little pasta water if needed to reach desired consistency.
- Transfer to a serving bowl.
- Sprinkle with 1/4 cup grated Parmesan cheese (optional) and extra basil leaves for garnish.
