- Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
- In a large bowl, whisk together 6 large eggs, 1 cup (200g) granulated sugar, and 1 teaspoon vanilla extract until pale and thick (about 5-7 minutes using an electric mixer).
- In a separate bowl, gently whisk together 1 cup (125g) all-purpose flour and 1/2 teaspoon baking powder.
- Gradually add the dry ingredients to the egg mixture, folding gently until just combined. Be careful not to overmix.
- Pour the batter into the prepared cake pan and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
- Once cooled, prepare your desired filling/icing. For the Mocha Buttercream (recipe available upon request), whip the butter, confectioners sugar, and mocha until light and fluffy.
- Once the cake is completely cool, level the top if necessary. Slice the cake horizontally into two layers.
- Frost the bottom layer with a generous amount of buttercream or your chosen filling.
- Top with the second layer and frost the entire cake with the remaining buttercream.
