Mix until well combined.
  4. Pour the cheesecake batter into the cooled crust. Place the springform pan in a larger roasting pan. Pour enough hot water into the larger pan to come halfway up the sides of the springform pan (this creates a water bath for even baking).
  5. Bake for 75-80 minutes, or until the center is just set. Let cool completely on a wire rack before refrigerating for at least 4 hours, or preferably overnight.
  6. Once chilled, carefully remove the sides of the springform pan and serve. Top with whipped cream and a sprinkle of pecan halves, if desired.
