How to Make Caribbean Ginger Beer
- Wash and peel 1 cup of fresh ginger root.
- Grate or finely blend the peeled ginger.
- In a large (gallon-sized) glass or ceramic jar, combine the grated ginger, juice of 4 limes, 10 whole cloves, 1 cinnamon stick, and ¾ cup (150g) granulated sugar.
- Add 10 cups (2.4 liters) of boiling water to the jar. Stir until the sugar is completely dissolved.
- Allow the ginger mixture to steep and cool to room temperature.
- Cover the jar tightly and refrigerate for 7 days.
- Line a large strainer with a double layer of cheesecloth.
- Strain the ginger mixture through the cheesecloth into another large (gallon-sized) glass or ceramic jar, pressing firmly on the solids with the back of a spoon to extract maximum flavor.
- Discard the solids.
- Add the remaining ½ cup (100g) granulated sugar to the ginger beer and stir until dissolved.
- Serve in glasses filled with crushed ice. Garnish with fresh mint sprigs.
