How to Make Caribbean Ginger Beer

  1. Wash and peel 1 cup of fresh ginger root.
  2. Grate or finely blend the peeled ginger.
  3. In a large (gallon-sized) glass or ceramic jar, combine the grated ginger, juice of 4 limes, 10 whole cloves, 1 cinnamon stick, and ¾ cup (150g) granulated sugar.
  4. Add 10 cups (2.4 liters) of boiling water to the jar. Stir until the sugar is completely dissolved.
  5. Allow the ginger mixture to steep and cool to room temperature.
  6. Cover the jar tightly and refrigerate for 7 days.
  7. Line a large strainer with a double layer of cheesecloth.
  8. Strain the ginger mixture through the cheesecloth into another large (gallon-sized) glass or ceramic jar, pressing firmly on the solids with the back of a spoon to extract maximum flavor.
  9. Discard the solids.
  10. Add the remaining ½ cup (100g) granulated sugar to the ginger beer and stir until dissolved.
  11. Serve in glasses filled with crushed ice. Garnish with fresh mint sprigs.
