How to Make Cherry Vanilla Cream Soda

  1. In a small saucepan, combine 1 cup (200g) of water and 1 cup (200g) granulated sugar.
  2. Add 1 vanilla bean, split lengthwise and scraped.
  3. Bring to a boil over medium heat. Reduce heat and simmer for 2 minutes, or until the sugar dissolves completely and the mixture slightly thickens into a syrup.
  4. Remove the vanilla bean from the syrup. Rinse the bean under hot water.
  5. Set the vanilla bean aside to air-dry and reserve for later use (e.g., in baking).
  6. Allow the syrup to cool completely.
  7. Stir in 1 teaspoon pure vanilla extract and 1/2 teaspoon almond extract.
