How to Make Cinnamon Stars
- Preheat oven to 300°F (150°C). Line a baking sheet with parchment paper.
- In a large bowl, beat 3 large egg whites with an electric mixer until soft peaks form.
- Gradually add 150g granulated sugar and 1 packet (or 1-2 tsp) vanilla sugar (or vanilla extract), beating until stiff, glossy peaks form.
- Set aside 50ml of the egg white mixture.
- Gently fold in 1 tsp ground cinnamon and 50g finely chopped almonds into the remaining egg white mixture.
- Quickly and gently combine all ingredients until a smooth dough forms. Be careful not to overmix.
- Lightly dust a clean work surface with powdered sugar. Roll out the dough to a thickness of 6mm (1/4 inch).
- Use a star-shaped cookie cutter to cut out stars, dipping the cutter in hot water frequently to prevent sticking.
- Brush the cut-out stars with the reserved egg white mixture.
- Place the stars onto the prepared baking sheet, leaving some space between each cookie.
- Bake for 20 minutes, or until golden brown, on the middle rack of the preheated oven.
