How to Make Cinnamon Stars

  1. Preheat oven to 300°F (150°C). Line a baking sheet with parchment paper.
  2. In a large bowl, beat 3 large egg whites with an electric mixer until soft peaks form.
  3. Gradually add 150g granulated sugar and 1 packet (or 1-2 tsp) vanilla sugar (or vanilla extract), beating until stiff, glossy peaks form.
  4. Set aside 50ml of the egg white mixture.
  5. Gently fold in 1 tsp ground cinnamon and 50g finely chopped almonds into the remaining egg white mixture.
  6. Quickly and gently combine all ingredients until a smooth dough forms. Be careful not to overmix.
  7. Lightly dust a clean work surface with powdered sugar. Roll out the dough to a thickness of 6mm (1/4 inch).
  8. Use a star-shaped cookie cutter to cut out stars, dipping the cutter in hot water frequently to prevent sticking.
  9. Brush the cut-out stars with the reserved egg white mixture.
  10. Place the stars onto the prepared baking sheet, leaving some space between each cookie.
  11. Bake for 20 minutes, or until golden brown, on the middle rack of the preheated oven.
  12. Let the cookies cool completely on a wire rack before storing in an airtight container.
