How to Make Festive Fusilli

  1. Preheat oven to 450°F (232°C).
  2. Cook pasta according to package directions. Add broccoli during the last 3 minutes of cooking time.
  3. While pasta cooks, peel and smash 2 cloves of garlic with the side of a chef's knife.
  4. In a bowl, toss the cherry or grape tomatoes with 2 tablespoons of olive oil, 1 teaspoon of dried oregano, and salt to taste.

  7. Reserve 1/2 cup of pasta cooking water before draining the pasta and broccoli.
  8. Add the reserved pasta water to the roasted tomatoes, stirring to scrape up any browned bits.
  9. Return the drained pasta and broccoli to the saucepot.
  10. Stir in the tomato mixture, 1/2 cup of grated Parmesan cheese, and more salt and freshly ground black pepper to taste.
  11. Serve immediately and enjoy!
