How to Make Homemade Berry Syrup For Pancakes

  1. Wash, stem, and gently crush 4 cups of mixed berries (strawberries, blueberries, raspberries, etc.) in a medium saucepan.
  2. Heat the berries over medium heat, bringing to a boil. Reduce heat and simmer for 10-12 minutes, or until the berries have softened and released their juices.
  3. Pour the hot berry mixture through a fine-mesh sieve or colander lined with cheesecloth to remove seeds and pulp. Press gently on the solids to extract as much juice as possible.
  4. Discard the pulp and seeds.
  5. You should have approximately 5 cups of berry juice. If you have less, adjust the sugar accordingly (see note below).
  6. In a large saucepan, combine the berry juice with 2 cups of granulated sugar (or to taste). Bring to a rolling boil for 1 minute, stirring constantly.
  7. Remove from heat and skim off any foam that has formed on the surface.
  8. Allow to cool slightly before serving. For longer storage, can in sterilized 1/2 pint jars according to recommended canning procedures.
