How to Make Puzzle Cookies

  1. Preheat oven to 350°F (175°C).
  2. In a medium bowl, combine 1 cup (2 sticks) softened unsalted butter and ¾ cup granulated sugar. Cream together until light and fluffy.
  3. Beat in 2 large eggs one at a time, then add 1 teaspoon vanilla extract.
  4. In a separate bowl, whisk together 3 cups all-purpose flour, 1 teaspoon baking powder, and ½ teaspoon salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  6. Divide the dough into 6 equal portions.
  7. On an ungreased baking sheet, roll each portion into a 5-inch square.
  8. Press a well-floured 3- to 4-inch Halloween-themed cookie cutter into the center of each square. Gently remove the cutter, leaving the dough imprint.
  9. Using a sharp knife, carefully cut the outer portion of each square into large puzzle pieces, leaving the center shape intact.
  10. In a small bowl, whisk together 2 large egg yolks and 1 tablespoon of water.
  11. Divide the egg yolk mixture into 3-4 small bowls. Add 2-3 drops of different liquid food colorings (or desired amount of paste food coloring) to each bowl. Mix well.
  12. Using a small, clean paintbrush, carefully brush each puzzle piece with a different colored egg yolk mixture.
  13. Bake for 7-8 minutes, or until the bottoms are lightly golden and the centers are set. Keep a close eye on them as ovens vary.
  14. While still warm, carefully recut the puzzle pieces with the knife to ensure clean edges. Trim edges as needed.
  15. Transfer the cookies to a wire rack to cool completely.
