How to Make Raspberry Heaven

  1. In a medium saucepan, combine one (3 oz) package raspberry Jell-O, one (3.4 oz) package cook & serve tapioca pudding mix, and one (3.4 oz) package cook & serve vanilla pudding mix.
  2. Add 3 cups of water to the saucepan.
  3. Cook over medium heat, stirring constantly, until the mixture comes to a boil and begins to bubble.
  4. Reduce heat to low and continue to simmer for 3 minutes, stirring constantly to prevent sticking.
  5. Remove the saucepan from the heat and let the mixture cool slightly.
  6. Pour the mixture into a large bowl and refrigerate for at least 2 hours, or until completely chilled and set.
  7. Once chilled, gently fold in 8 ounces of Cool Whip (1 container).
  8. Gently fold in 6 ounces of frozen raspberries (1/2 of a 12 oz package).
  9. Serve chilled. Garnish with fresh raspberries and mint (optional).
