How to Make Soy Milk

  1. Rinse 1 cup of dried soybeans thoroughly under cold water.
  2. Place soybeans in a large bowl and cover with 6 cups of filtered water. Soak for at least 8 hours, or preferably overnight.
  3. Drain the soaking water and rinse the soybeans again.
  4. Combine the soaked soybeans and 8 cups of fresh filtered water in a high-speed blender.

  7. Return the strained soy milk to the blender (optional). Add a pinch of salt and sweetener to taste, then blend again briefly to combine.
  8. Pour the soy milk into airtight containers and refrigerate for at least 2 hours to allow the flavors to meld. Soy milk will keep in the refrigerator for up to 5 days.
