How to Make Strawberry Lemonade Concentrate Bottled

  1. Wash and hull 1 kg (2.2 lbs) fresh strawberries. Rinse thoroughly and drain.
  2. Puree the strawberries using a food processor or blender until smooth.
  3. Juice 16-20 large lemons (or 24-30 limes), aiming for approximately 4 cups of fresh juice. (Add more lemons/limes if needed depending on their juiciness).
  4. In a large saucepan, combine the strawberry puree, lemon (or lime) juice, and 4 cups of granulated sugar.
  5. Heat the mixture over medium heat, stirring constantly, until the sugar is completely dissolved. Do not boil.
  6. Meanwhile, sterilize your jars and lids: Place jars in a large kettle and cover with water by at least 1 inch. Bring to a boil and boil for 10 minutes. Remove jars carefully with tongs and set aside in a warm place.
  7. Carefully ladle the warm strawberry lemonade concentrate into the sterilized jars, leaving 1 cm (about ½ inch) of headspace at the top.
  8. Remove air bubbles by running a non-metallic utensil around the inside of the jar.
  9. Wipe the jar rims clean with a damp cloth, ensuring no residue remains.
  10. Affix the lids and bands, tightening according to the manufacturer’s instructions.
  11. Process the filled jars in a boiling water bath for 15 minutes, ensuring the water completely covers the jars by at least 1 inch.
  12. Remove the jars from the boiling water bath and let cool completely. You should hear a ‘pop’ sound as the jars seal.
  13. To serve, mix 1 part concentrate with 2 parts cold water. Add ice and enjoy!
