- Prepare your sponge cake: If using a homemade sponge, bake according to your chosen recipe. Once cooled, cut the cake horizontally in half.

- In a mixing bowl, beat together 8 oz (225g) mascarpone cheese, 1/4 cup (50g) icing sugar, 1 cup (240ml) heavy cream, and the remaining 1/4 cup Kahlúa until smooth and fluffy.

- Cover the springform pan and chill in the refrigerator for at least 2 hours, or until set.
- While the tiramisu chills, prepare the berry topping: Gently wash and hull 2 cups of your favorite summer berries (strawberries, raspberries, blueberries, etc.).
