Cómo preparar British Christmas Cake

  1. Grease and flour an 8-inch square cake tin. Line the base and sides with greased greaseproof paper.
  2. Wrap the outside of the tin with double layers of brown paper.
  3. Sift together the flour and mixed spice into a large mixing bowl. Stir in the grated lemon zest.
  4. In a separate bowl, cream together the butter and sugar until light and fluffy.
  5. Beat in the golden syrup, then add the eggs one at a time, mixing well after each addition. If the mixture curdles, gently stir in a spoonful of flour.
  6. Gently fold in the sifted dry ingredients, along with the currants, raisins, sultanas, mixed peel, cherries, and chopped nuts until evenly distributed.
  7. Stir in the brandy.
  8. Spoon the batter into the prepared tin, level the surface, and gently tap the tin to remove air bubbles.
  9. Make a slight indentation in the center of the batter.
  10. Cover the tin and leave the cake to rest in a cool place for 24 hours.
  11. Preheat oven to 150°C (300°F). Place a container of water on the bottom shelf of the oven to create moisture.
