  8. Tie the cheesecloth closed securely.

  10. Measure exactly 5 1/2 cups of gooseberry juice into a 6- or 8-quart saucepan.
  11. Stir in 1 box (1 3/4 ounces) of Sure-Jell powdered pectin.

  13. Bring the mixture to a full rolling boil on high heat, stirring constantly.
  14. Stir in 7 1/2 cups of granulated sugar.
  15. Return to a full rolling boil and boil exactly 1 minute, stirring constantly.
  16. Remove from heat.
  17. Skim off any foam with a metal spoon.
  18. Ladle the hot jelly immediately into prepared half-pint jars, filling to within 1/8 inch of the tops.
  19. Wipe jar rims and threads clean.
  20. Cover with two-piece lids and screw bands tightly.
  21. Process in a boiling water bath for 5 minutes.
