- Crush 250g of Hudson's chocolate chip biscuits (or your preferred brand) into crumbs. You can do this in a food processor or by placing them in a strong bag and crushing them with a rolling pin.
- Melt 100g of good quality milk chocolate in a heatproof bowl set over a pan of simmering water (don't let the bottom of the bowl touch the water). Stir until smooth.
- In a separate bowl, whisk together 1 can (397g) of sweetened condensed milk, 1 teaspoon of vanilla extract, and 2 tablespoons of your chosen liquid (sherry, milk, juice, or liqueur).
- Add the melted chocolate and stir into the condensed milk mixture until fully combined.
- Gradually add the crushed biscuits, mixing until a firm dough is formed.
- Line a loaf tin (approximately 23cm x 13cm) with baking parchment.
- Press the biscuit mixture firmly and evenly into the prepared loaf tin.
- Cover and refrigerate for at least 3 hours, or preferably overnight, to allow the flavors to meld and the log to firm up.
- Once chilled, remove the log from the tin and carefully peel away the baking parchment.
- Dust with cocoa powder (optional) and slice into thick pieces for serving.
